Moms Easy Biscotti


Moms EasyBiscotti recipe is one of the simplest ever! Though not really a true biscotti, in that the batter is thin enough to be poured into the baking pan, it is still quite good.  This Biscotti recipe is delightful to make because you can make it quickly……… when one of your kid’s tells you at 9pm that she needs 3 dozen cookies for school tomorrow.

This recipe contains nuts, but you will chop them first so that the finished biscotti will be easier to cut.  Other than that the recipe is pretty basic, made from ingredients that you would normally have around your home. If you don’t have walnuts you can substitute any other nut you have on hand.  You can, of course, stir in whatever extras you like, just remember that the more you add the less easy it becomes

If you want to make these even simpler to make then pour batter into two Biscotti pans that are about half the size of the full pan.  This will help the dough hold the Biscotti shape better and cool faster for removal and cutting.  The only thing about these pans is that they are not good for the second bake, so you will have to use a different baking sheet.

 Moms Easy Biscotti Recipe


Ingredients: 

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 8 eggs
  • 1 3/4 cups sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons real vanilla extract
  • 1/2 cup walnuts finely cut
  • Cinnamon for dusting

Directions:

  1. Position one of your oven racks in the center of the oven and preheat oven to 300 degrees.
  2. Spray a 12 X 16 sided jelly roll pan with vegetable spray.
  3. In a bowl sift together flour, baking powder and salt and set aside.
  4. In a separate bowl beat the eggs with the sugar until you get a smooth pale yellow color.
  5. Add oil and vanilla mix well then add the flour mixture and mix again until well blended.
  6. Add the nuts and blend in.
  7. Pour in the batter into the prepared baking pan.
  8. Dust lightly with cinnamon and place into the oven on the middle rack. Bake 35 minutes.
  9. Cool in pan and cut into 1" X 4" bars. You will have 48 cookies (4 dozen).
  10. If you want a soft version of Moms Easy Biscotti, allow to cool and store in airtight container.
  11. If you want a harder version of this easy Biscotti then place the separated cookies directly on the oven rack and bake again for 5 - 8 minutes watch carefully.

If you want to make variations to this biscotti recipe, dip the ends in melted dark or white chocolate bark and then into nuts or whatever ever you like.
