biscotti the spreads to much

Hi there!

I'm in need of some help, can anyone tell me why my biscotti spreads to much? Or are they suppose to spread so we get nice long pieces?

Hi again,

I think I figured out the reason. I may have added too much butter. On the flip side. I did put the dough in the frig for bout 1 1/2 hrs. And I did make my logs about 3 fingers wide/high. and I did add a tad more flour as well. But the next time I will cut back on the butter. As they say, everything is better with butter!!! Thanks so much for ur help!! Keep on bakin!!!

If your biscotti is spreading too much

Hi PJ

If your biscotti is spreading too much it could be or several reasons. It will spread, about double in size from the raw dough.

If the dough contains butter or margarine it could be to warm after mixing, quite likely if you use a stand mixer. If this is the case, wrap in plastic wrap and refrigerate for 1 hour

If using margarine, you could switch to butter and the biscotti will spread less

Could be that the recipe is wrong; try adding a bit more flour, for most recipes the dough should be pretty dry, almost difficult to work with.

Some recipes just spread more than other, like my Valentine’s Day biscotti, I think because the cinnamon candies become very hot and melt into the dough.
