Handling and Shaping Biscotti

I figure this one out by accident, after washing my hands and not drying them.

When handling a shaping biscotti, particularly the sticky ones, like the Valentine's Day Biscotti on this site, moisten your hands under running water. The dough is much easier to handle with damp hands, and you don't have the mess you make with dusting the dough with extra flour.

Thanks for the tip George, I will change the recipe for Valentine's Day Biscotti, to use moistened hands, because those little candies do make it a sticky one.
