When to add bulking

Thanks for the question. In response it would not be necessary to ad a bulking agent when only replacing a tablespoon or two of sugar. For anything up to 1/8 cup you should be able do without bulking. When you start to reach 1/4 cup you could bulk by adding more of one of the other ingredients. Like a little more flour, few more nuts or bananas. When you get to 1/2 cup or more you need some bulking, as more flour, or cocoa would effect the taste and texture. Another, option would be to reduce pan size just a bit to compensate, it depends on the recipe.
